Gluten-Free Dark Chocolate Lime Brownies + Recipe


This is the first chocolate recipe I've made in months... which is weird because I LOVE chocolate!  I found this recipe two years ago on the awesome web magazine, The Kitchn.  The combination of lime and salt with the chocolate is delicious and unique!  



Dark Chocolate Lime Brownies (Gluten-Free)
Makes 16 2-inch square brownies 

Ingredients: 
1 stick + 2 tablespoons unsalted butter 
¾ cup dark chocolate chips
½ cup sugar 
½ cup millet flour 
¼ cup sweet sorghum flour 
¼ cup cocoa powder 
2 eggs 
1 teaspoon vanilla 
¼ teaspoon salt, plus a little extra 
½ teaspoon xanthan gum 
1 lime, juiced and zested 
½ teaspoon sea salt 

Directions: Preheat the oven to 325°F and line an 8x8-inch baking pan with parchment paper.  In a medium saucepan, melt the butter and bittersweet chocolate over medium-low heat.  Stir until smooth.  Remove pan from the heat and add the sugar, millet flour, sweet sorghum flour, cocoa powder, eggs, vanilla, salt and xanthan gum.  Mix until combined.  Add lime juice and zest.  Stir to combine and pour into prepared pan. Sprinkle a little extra salt on the top.  Bake for 30 to 35 minutes or until a tester comes out moist.  It will not be perfectly clean, but it shouldn't be sticky either.  Allow pan to cool for at least 15 minutes before removing brownies from pan.  Cool completely and cut into 2 inch squares.
