Happy Earth Day! To celebrate I made a gluten-free rhubarb oven cake for dessert. My Dad sent me home with some rhubarb from the garden on Easter Sunday and I was excited to put it to good use!

Pumpkin Feast in April! - Gluten-Free Oatmeal Cookie Pumpkin Pie + Recipe
Pumpkin pie in April? Why, yes please! I have three reasons for why this is an awesome idea:
- It snowed yesterday - which made me want to go back into hibernation and eat lots and lots of pie.
- Pumpkin. I love pumpkin and if I could find canned pumpkin year round I'd just have 12 months of Pumpkin Feast every year.
- I'm trying to clean out our cupboard and I have one last can of pumpkin puree and I didn't want to hoard it any longer.

Gluten-Free Chocolate for Breakfast Smoothie + Recipe
I see no problem with having chocolate, or dessert for that matter, for breakfast, especially if it's something like a muffin or sweet bread. I don't have dessert for breakfast every day, but I usually have a little bit of chocolate with my morning coffee. This smoothie is a healthy way to indulge in delicious chocolate, even if you don't eat dessert items first thing in the morning. It even has fruit in it!

I was craving biscuits and soup after being out in the cold rain today. I'm grateful it's not snowing, but I'm tired of the clouds and cold! I'm hoping for warm and sunny spring days. Until then, I have warm soup and these gluten-free biscuits.

Gluten-Free Strawberry-Blackberry Crumble + Recipe
I saw this recipe today on POPSUGAR - it's a strawberry crumble with only five ingredients. It looked delicious, so with just a few changes (it brings the ingredient total up from five to nine) I was able to make it gluten-free. It's pretty good - I'm sure it would be delicious with some vanilla ice cream too!

Gluten-Free M&Minty Chocolate Cookies for St. Patrick's Day
Happy St. Patrick's Day! My favorite color is green, so even though I don't have very much Irish ancestry (that I know of), I still like to don a green outfit for the day. This year I also made some 'anti-pinch polish' for some friends (I don't condone pinching someone that doesn't wear green though, that's just mean!) and baked some gluten-free M&Minty Chocolate Cookies. Healthy Purple Smoothie + Recipe
I threw some spinach into a fruit smoothie for lunch today - it was surprisingly good! I'm not usually a fan of green smoothies, but I couldn't taste the spinach in this smoothie (though you can see specks of green in the photos!). The recipe below is approximate, I didn't measure anything.

Gluten-Free Citrus Yogurt Cake + Recipe
Today I made blood orange yogurt cake - the red juice of the blood orange made the glaze bright pink! The recipe I used is my gluten-free citrus yogurt cake recipe. This recipe can be made using any citrus, so far I have made it with grapefruit, Meyer lemon and blood orange. I plan to try lime or pomelo next!

Gluten-Free Black & White Chocolate Pomegranate Cookies
Black & White Chocolate Pomegranate cookies are a delicious treat for a cold winter day! I made these gluten-free from a Double Dark Chocolate Pomegranate Cookies recipe, subbing some of the dark chocolate chips for white chocolate. If you can't find pomegranate arils in your area, I think dried cranberries would be a great substitute!

A Very 1950s Holiday with the Ohio Historical Society at Whole Foods - Upper Arlington
On Saturday this weekend, Kenneth and I went back in time at our local Whole Foods! The Ohio Historical Society was celebrating a 1950s Thanksgiving at Whole Foods, complete with costumed characters, 1950s recipes and crafts for kids. After Halloween, Thanksgiving is my favorite holiday. I love visiting with my family (without the chaos of Christmas shopping) and Thanksgiving food is the best! I also really enjoy learning about the past, local history and my own genealogy are my favorite historical subjects. When I read about this event I was pretty excited to attend!

Gluten-Free Ginger Pear Pumpkin Muffins + Recipe
These pumpkin muffins really make me wish I had a jumbo muffin pan (kind of like this one by Lodge). When I was a college student at Ohio University I would eagerly wait for Fall every year so I could buy a gigantic pumpkin muffin from Perk's Coffee House & Roastery. Those muffins were amazing! They signaled that Fall had arrived just as much as the changing leaves and cool temperatures did. Eating one of those muffins made me feel better after a rough day, once I even bought Kenneth a giant pumpkin muffin as a way to say "I'm sorry" after a fight (that's how good these muffins were, they could serve as a food apology) only to find out he had bought me one too! They were pretty powerful pumpkin muffins...

Simple Gluten-Free Chicken Noodle Soup + Recipe
Fall is the time of year for soups and stews! Kenneth and I made a really simple gluten-free chicken noodle soup this afternoon and paired it with some gluten-free crackers and ginger ale for dinner. A perfect meal if you're feeling under the weather, or if you're feeling perfectly healthy!

Kadu Bouranee (Sweet Pumpkin with Yogurt Sauce) + Recipe
Kadu bouranee is one of my favorite pumpkin dishes! You can make it with pumpkin or squash (this time I used butternut squash that was pre-cut to save some time). I've made this dish a few times for Kenneth and I's anniversary - but it took my so long to cut and peel the squash I only felt like making it once a year! Now that I've successfully made it with the short-cut pre-cut butternut squash, it may become a more regular Fall dish in our house. Today I served it with the Brazilian Pão de Queijo (gluten-free cheese rolls) and it was delicious!

Gluten-Free Rosemary Lemon Cornmeal Cookies + Recipe
These sunny little cookies are delicious! The lemon and rosemary are refreshing together and the cornmeal adds a nice texture. The cookies are similar to soft sugar cookies, if you want a crunchier cookie, use less lemon juice. The dough is very soft, since I only have one silpat mat I keep the dough in the freezer in between batches.

Gluten-Free Pumpkin Mac & Cheese + Recipe
This pumpkin mac and cheese is delicious and very easy to make (plus clean-up is a easy because it can be made in one pot)! The most time consuming part of the recipe is chopping the rosemary (it takes me forever to wash the stickiness from rosemary off of my fingers!), but it's totally worth it! The pumpkin flavor is not overwhelmingly strong and the garlic and rosemary are delicious together! You could always increase the amount of either if you're a big fan and don't forget to try the mac and cheese with cinnamon! It sounds strange, but is really delicious (I forgot it for the photo, but I almost always eat this dish with a dash of cinnamon sprinkled on top!).

Gluten-Free Orange Pumpkin Bread & Pumpkin Chicken Chili + Recipes
I enjoyed a bowl of pumpkin chicken chili and pumpkin bread for dinner tonight (while pretending that the thermostat hadn't almost reached 80 degrees today). It's officially Fall - but it doesn't feel that way yet in Columbus!
Thankfully, it doesn't have to feel like Fall to cook or bake some chilly weather food (though I do hope it cools off soon, I'm ready for sweater, jacket and scarf weather!).
