I saw this recipe today on POPSUGAR - it's a strawberry crumble with only five ingredients. It looked delicious, so with just a few changes (it brings the ingredient total up from five to nine) I was able to make it gluten-free. It's pretty good - I'm sure it would be delicious with some vanilla ice cream too!
Strawberry-Blackberry Crumble (Gluten-Free)
Makes 2 ramekins (equals two generous servings)Ingredients:
2 1/2 tablespoons sugar
1/2 cup plus 1 1/2 tablespoons gluten-free all-purpose flour
~2 cups strawberries and blackberries, cut larger strawberries in half
1/2 teaspoon salt
1/2 cup gluten-free oats
1/4 teaspoon xanthan gum
2 tablespoons melted butter
1/4 teaspoon cinnamon
Directions: Preheat the oven to 375°F. Set two ramekins on a baking sheet, set aside. In a medium sized bowl, stir together 1 1/2 tablespoons of sugar, 1 1/2 tablespoons gluten-free flour, and all of the salt. Add the strawberries and blackberries. Stir well and set aside for 10 minutes. In a separate bowl, combine the gluten-free oats, 1/2 cup gluten-free flour, and 1 tablespoon of sugar. Slowly add the melted butter, until a loose crumble forms. Spoon the berry mixture into the two ramekins, dividing evenly. Top the berries with the oat mixture, and sprinkle with the cinnamon. Bake for 30 minutes. Allow to cool for 10 minutes before enjoying.
