This delicious oven cake is like a giant, puffy pancake! It comes together very quickly and is the easiest baked good I make. It's fantastic for breakfast or dessert!
The recipe is very simple. You cook the apples slightly on the stove top with the butter and cinnamon. The apples smell amazing at this point!
Stir the batter together quickly with a fork or whisk, then pour over the apples in the skillet. Pop in the oven and set a timer for fifteen minutes!
The cake is done when the edges are browned and the whole thing looks puffy. Sprinkle with a little lemon juice, powdered sugar and enjoy while warm!
Apple Oven Cake (Gluten-Free)
Serves 6
Ingredients:
3 tablespoons butter
1/4 cup brown sugar
1/8 teaspoon cinnamon
1 Gala apple, thinly sliced
3 large eggs
1/4 cup tapioca starch
1/4 cup sweet sorghum flour
1/2 cup milk
1 tablespoon fresh lemon juice
1 tablespoon powdered sugar
Directions: Preheat oven to 425°F. Melt the butter large cast iron skillet over high heat. Add the brown sugar and cinnamon, stirring constantly. Add the apple slices and cook until just starting to soften, about 3 minutes. Combine flour and tapioca starch in a bowl. Add eggs and milk, stir well. Pour egg mixture into pan and bake until puffed and brown, about 15 minutes. Sprinkle with lemon juice and powdered sugar.
