Gluten-Free Black Forest Berry Muffins + Recipe




These muffins are delicious!  Full of chocolate and dark berries!



Black Forest Berry Muffins (Gluten-Free)
Makes 12 muffins
Ingredients:
1 cup sweet sorghum flour*
½ cup millet flour*
½ cup tapioca flour*
1 ½ teaspoons baking soda
½ teaspoon salt
2 tablespoons cocoa powder
⅔ cup brown sugar
1 teaspoon cinnamon
1 teaspoon xanthan gum**
1 large egg
1 teaspoon vanilla extract
½ stick melted butter
1 cup milk
1 cup black raspberries
½ cup dark chocolate chips
Brown sugar, for sprinkling

Directions:  Preheat the oven to 350°F.  Combine flours, baking soda, salt, cocoa powder, brown sugar, cinnamon, xanthan gum in a bowl and mix until combined.  Stir in the egg, vanilla, melted butter and milk.  Add raspberries and chocolate.  Stir well and spoon batter into muffin liners.  Sprinkle a small amount of brown sugar on top of each muffin.  Bake for approximately 16 to 18 minutes, or until toothpick inserted in the muffins comes out clean.  Cool for five minutes in the muffin pan, then remove.

*Use 2 cups regular all purpose wheat flour, or whole wheat flour if not making gluten-free.

**Omit if not making gluten-free.



I need new muffin liners - all I had left tonight were Martha Stewart's Halloween liners! Spooky!
